Yoshihiko Takahashi. Born in Tokyo.

Started his career at the age of 20. Became independent in 1998.

Runs YOSHI ZUSHI Since 2008

 Our creed is to serve delicious seasonal ingredients according to each season.

We welcome all the customer with a homelike atmosphere.

We are happy to take request from customers who wish to enjoy

their favorite sushi according to their budget.

We hope you try and enjoy white fish and silver-skinned fish.

The preparation of silver-skinned fish such as “KOHADA” Japanese shad, “AJI” horse mackerel, “SABA” mackerel, “IWASHI” sardines, and “SANMA” Pacific saury depends on the skill of chef. It is said that experience and skill are required to make the best use of the flavor by adjusting the amount of salt and vinegar, and season fish with use of kelp to prepare silver-skinned fish.

Toasty fragrant omelet is homemade.

YOSHI ZUSHI omelet is a dish that has been reached through trial and error for a long time. The omelet, which is lightly sweetened and has aroma of soup stock, with an accent to the texture by some ingredients. As a proof of guaranteed quality and completion, we mark “YOSHI” on omelet with branding iron.

Ingenuity of Edomae, boiled soy sauce enhances the taste of the ingredients.

To bring out the best taste of sushi, we also add some effort to the soy sauce. Sake, mirin (sweet sake), and our special soup stock are added to the soy sauce in a proper balance, and boiled to give a mellow taste. Please enjoy with YOSHI SUSHI's original soy sauce.

“GARI” pickled ginger, is also homemade.

Our GARI is very committed and unique. GARI is essential for sushi. To enjoy the taste of it more we slice ginger to a suitable thickness and season it with secret pickled juice. Please enjoy the unique taste at YOSHI ZUSHI.
